Honey Nut Cheerios
Ingredients
2 cups Cheerios or other brand of similar sugar-free cereal
2 tablespoons honey or as much as you need to satisfy your sweet tooth
1/4 teaspoon almond extract
Instructions
1. Put all ingredients in a pot and heat on medium for about three minutes, stirring to coat all of the Cheerios. The heat causes the honey to liquify and combine better with the Cheerios.
2. Cool and eat whenever you want! Note: If you are concerned about them being too sticky, lay them out on a parchment-lined baking sheet overnight to let the honey absorb a bit more before storing.
Pineapple Mango Smoothie
Ingredients
Pineapple juice
Chopped pineapple
Chopped mango

1. Blend to taste

Ingredients
Apples - Pink Lady Apples- these are my personal favorite.
Water
Sugar or another sweetener (optional)
Ground cinnamon (optional)
Pinch of salt
Lemon juice
Instructions
1. Peel and core the apples. I just used a potato peeler and then cut the apple to make the core a rectangle.
2. Transfer the apples to a large pot. Add the water, lemon juice, sweetener, cinnamon, and salt and mix to combine. You don’t need a lot of liquid, however, you will need approximately 1/2 cup to help steam the apples and move things along. Some people use apple juice or apple cider instead of water, but I just see that as more sugar, so I’ll let you decide.
3. Bring liquid to a boil, reduce heat, and cover. Now the hard part is over (since, you know, that was super hard). Allow the apples to cook for approximately 25-30 minutes. Your apples should be broken up, buy partially intact, and very soft. Remove those sweet apples from heat.
4. Make into applesauce. I used my food processor that I got from Walmart for $10. You can mash them or even just blend them with a normal blender, just don't forget that you're probably going to want the consistency to be like... applesauce, not a smoothie.
Vegan Crepes
Ingredients
1/2 cup soy milk
1/2 cup water
1/4 cup melted soy margarine
1 tablespoon turbinado sugar
2 tablespoons maple syrup
1 cup unbleached all-purpose flour
1/4 teaspoon salt

1. In a large mixing bowl, blend soy milk, water, 1/4 cup margarine, sugar, syrup, flour, and salt. 2. Cover and chill the mixture for 2 hours.
3. Lightly grease a 5 to 6 inch skillet with some soy margarine. Heat the skillet until hot. Pour approximately 3 tablespoons batter into the skillet. Swirl to make the batter cover the skillet's bottom. Cook until golden, flip and cook on opposite side.
Vegan Banana Bread
Ingredients
1 ¾ Cup flour
⅓ cup organic pure cane sugar
2 teaspoons baking powder
½ teaspoon baking soda
Pinch of mineral salt
⅓ cup coconut oil or vegan butter
1 teaspoon vanilla extract
3-4 bananas
¼ cup almond milk
½-⅔ cup chopped walnuts (optional)
¼-½ cup chocolate chips (optional)
1 teaspoon cinnamon (optional)
Instructions
1. Preheat oven to 350 degrees F. Grease your loaf pan.
2. In the first medium mixing bowl mash the bananas and mix in the coconut oil and vanilla extract
3. In the second medium bowl add the flour, sugar, baking soda, baking powder and salt, and mix well
4. Slowly mix the dry ingredients with the wet until mixed well. Do not over mix. If mixture seems too thick, add the almond milk
5. Pour batter into a greased loaf pan. Bake for about 50 min – 1 hour. Do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool for 10 min before slicing.
6. Store covered on the counter for up to 3 days or in the refrigerator up to 1 week. Keep in the freezer for up to 2 months. Thaw the wrapped loaves overnight in the refrigerator. Reheat in the microwave or a toaster oven with a door.
Tips: I used coconut oil in mine and I've noticed with coconut oil things just don't go well for me. It was good banana bread, but I feel like if I had used vegan butter it would have been even better.
